Soft serve at La Combine

La Combine is tucked away in a small shop with yellow-framed windows on Rue de Lancry, and at first glance, it’s quite simple. The interior is minimal, almost bare – but the smell of freshly baked waffles drifting in from the back is absolutely mouthwatering.

In front of me: two soft-serve machines and a small but interesting selection of flavors that apparently change weekly. Today’s menu:

  • Chocolate Sorbet

  • Buckwheat (Sarrasin)

  • Amaretto

  • Apricot

The woman behind the counter greets me with a warm smile. I go for Sarrasin – in a cone (which costs extra, but that’s fine). I pay €6 and get a generous portion.

 
 

Now, I’m usually not a big fan of soft ice cream – mostly because I’m a bit skeptical when it comes to hygiene in those machines and all the added air.
But let me tell you: Sarrasin is a winner. Deep, original flavor, not too sweet (which I really appreciate), and beautifully creamy – of course, it’s soft serve after all.

The waffle? Just super yummy – it honestly tasted like something my grandmother would make. Crispy at first, then rich and satisfying. You definitely are full after that!

Totally unique. Definitely 3 out of 3 – a true highlight.

I came back later in the week to try the Apricot, strawberry and sesame.

 
 

First impression: the color was beautiful – bright and inviting. The texture was super creamy from the first bite.
Flavor-wise, I personally would have wished for a bit more intensity from the apricot.
And wow, it was heavy! I honestly struggled to finish it – definitely one of the richer options on the menu.

The strawberry sorbet was a real delight – I felt like I was biting into a fresh strawberry. Super fruity, intense in flavor, simply delicious. A small “but” perhaps: for my taste, it could have been just a bit creamier.

Sesame (tahini), on the other hand, was a real discovery! Very original, barely sweet (which I personally love), with a wonderfully nutty sesame oil flavor. Not too overpowering, but clearly present – and beautifully creamy.

Conclusion: 3 Cones!! I’ll definitely be coming back.

Their mission? To serve artisanal soft ice cream made fresh every morning using only quality ingredients. They partner with @lezingam to source seasonal fruits from sustainable, local farms – no additives - nice!

La Combine opened its doors in summer 2024.

All in all, La Combine is a great spot for soft ice cream – creative, bold, and full of surprises.
I’ll definitely be back to try more, hoping for a few more 10s on my scale ;)
