There’s always a line outside Folderol. Always.
No signs, no screaming logos – just a quiet queue of people patiently waiting on Rue du Grand Prieuré. You don’t just walk in. A doorman greets you, gives you a nod, and eventually lets you inside. It's kind of like trying to get into a bar — which makes sense, because Folderol is also a wine bar.

Inside: dim lights, a warm buzz of conversation, and a big bar right at the entrence. That’s where the magic happens.
In the back a big wine collections.
You're handed a small handwritten menu with the day's ice cream flavors. No more than six or seven, but each one carefully chosen. I go for olive oil and yaourt – curious and definitely excited.
They ask for my name, and I step back outside to wait. A few minutes later, someone calls me. My cone is ready.
First thought? Homemade waffle cone. That already sets the tone. Chrispy slightly buttery, and fresh.
The ice cream itself? Just what you want it to be: creamy, full-flavored, and balanced. The olive oil is smooth and delicate, not too grassy, and the yaourt brings a nice tang that works perfectly with the cone’s richness. And best of all: not overly sweet. Just real, clean flavor.
Everything about Folderol feels intentional. Thoughtful. A little theatrical – but never too much.
No wonder people are willing to wait.
Conclusion: 3 Cones!! I’ll definitely be coming back.
Folderol is the side project of chef duo Jessica Yang and Robert Compagnon, known for their Michelin-starred restaurant Le Rigmarole just around the corner. Both trained in some of the world’s best kitchens (think Guy Savoy, Per Se, Brooklyn Fare), and their approach to food is clear: high-quality ingredients, minimal fuss, everything made with intention.
That same philosophy is behind Folderol — a cozy, no-sign wine bar that also happens to serve some of the best ice cream in Paris. No additives, no shortcuts. Just carefully developed flavors, homemade waffle cones, and a perfectly orchestrated experience from start to finish.
You taste the precision — but nothing about it feels pretentious.
