You don’t just “pop in” to Pierre Hermé. It’s more of a pilgrimage – especially if you love dessert the way I do. Known worldwide for his macarons and pâtisserie, Hermé also offers ice cream that feels… well, elevated.

The experience starts outside — no boutique entrance, no pastry counters. Just a sleek little Pierre Hermé ice cream wagon parked in front of the shop, with a small menu board and a staff member ready to scoop.
I went for 2 scoops in a cone :

Glace Infiniment Praliné Noisette
The ice cream itself? Deep, rich, and unmistakably pâtissier-level. You can tell this isn’t your typical scoop — the flavors are bold and refined, and the texture is incredibly smooth. The macaron vanilla is layered and aromatic, while the praliné noisette brings that intense hazelnut note that feels almost like a dessert in itself.

Often called the “Picasso of Pastry”, Pierre Hermé comes from four generations of Alsatian bakers. He began his career at just 14 years old as an apprentice to Gaston Lenôtre — one of the most legendary names in French pâtisserie — and quickly carved out a name for himself.

Known for revolutionizing the world of desserts, Hermé stripped away unnecessary decorations and focused on flavor, texture, and precision.

He opened his first boutique in Tokyo before returning to Paris, where Maison Pierre Hermé has become a symbol of haute pâtisserie — offering macarons, cakes, chocolates, and now: ice cream.
